1) I am not entirely sure what you mean. The number of blows you get with a weapon depends on the weight of the weapon, your strength and your dexterity, plus magical attributes like extra attacks. It does not depend on your skill level with that weapon. Mindcrafters have a class cap of 5 blows per weapon per round plus magical extra blows; that cap is the same for all weapons except poison needles (though it's impossible to actually reach that cap with extremely heavy weapons like maces of disruption, due to their weight). Weapon versatility will not change that. (Poison needles always get exactly 1 blow per round, regardless of your class.)
2) Eldritch Horror is highly annoying but usually not very dangerous, especially if you have a high saving throw and/or good free action, rConf and rChaos. (I suspect it might be more dangerous in an ironman run because the negative mutations it sometimes gives, in particular the moron mutation, can't be cured as easily.) Eldritch Horror resistance is convenient but not a commonly selected demigod power.
3) Evasion gives a 100% chance to "avoid" breath attacks, as well as rockets and rocks; however, it does not allow you to escape the attack completely, it only reduces the damage by a random amount that varies between 11% and 20%.
