3) High AC causes monsters to miss more often. It is more effective against low level monsters (which you dont care about) and it is unreliable damage reduction. Aggravation on Doomcaller is a good reason to not wield it constantly, the AC malus is not. With a half troll warrior, even aggravation isnt that horrible in the endgame since they tend to wake things up fairly quickly anyway. In any case, Doomcaller is a prime weapon for bossfights because of its damage. You will need to drink a few more healing potions, but it is very worth it.
4) Yes. Speed +30 is sufficient to avoid getting double moved; beyond 30, there are severe diminishing returns on speed and its better to use a ring of damage than another speed ring. Only a few monsters (Morgoth included) have speed +30; it is perfectly sensible to run around with +20 and use a speed buff to get to +30 in important situations (including the Morgoth fight).
