Personally, I like to listen to old rock groups like Rush, Yes, Journey, or some other similar groups that emphasize instrumental solos.
It can be entertaining listening to classical while playing Angband (like playing the "Dance of the Hours" while trying to get to that 4d5 long sword in the middle of a vault and at the same time, trying to stay alive in the dungeon with tons of OoD monsters). [To the rhythm of the music] See an Archlich (2700' OoD), teleport... appearing in the middle of a large group of gravity hounds, ****!!!, teleport again, make it to safety, rests a little while, cast detect monsters, and see Ancalagon right where you need to be... lol
