I wouldn't fight any fire drakes without double fire resistance (Narsil really would have helped here), though that only makes a difference to the breath attack. Another good approach is archery from a long safe distance and a way to lure them out of their caves. One nice feature is that they are territorial and so from the square where you first see them, you can usually step back or to the side and be instantly safe again.
