I found a forge and pumped 10 points in Smithing to forge 2 rings: one +3 accuracy, one +3 evasion (not bad for the first things forged!).

I've also found the Cloak of Luthien, making singing fairly attractive as an option: getting Aule and Sharpness could work rather nicely.

Yes, while unconscious riposting is kind of comical, it shouldn't really be in there. But this displays what seems like a more common bug: you should be able to dodge while unconscious, either!

Even the heavy stunning plus the curse might have made things difficult (-4 to evasion and take the worst of two rolls). Thanks for finding the riposte bug. It also looks like you were not getting penalised for evasion while knocked out. I'll have to fix a few things.
