I understand that intelligence is necessary for the mage, but is it interesting to try and rise the intelligence of a priest, or can it be left as low as possible?

INT affects disarming skill and magic device skill, but it's a pretty marginal effect in both cases. For magic device skill, you can get up to +13; for comparison, Hobbits, Gnomes, and High-Elves start out with skills of 18, 22, and 20 respectively. Likewise, for disarming, INT can give you up to +19, which compares to 15, 10, and 4 with those same races. In both cases class is the dominant actual effect on skill; all classes have starting skills that exceed these bonuses, and they give additional skill on levelup.
So basically, feel free to ignore INT as a priest. -
