You can manage LOS for Ethereal hounds by staying in a corridor or other confined space. That keeps more than 8 from getting adjacent to you (in practice, more than 5 or 6). By the time you're running into Ethereal hounds, their breath weapons should be relatively harmless; the main danger with them is that they're grouped wallwalkers, like Dreads.
