Just trying out 3.1.2v2, having played 3.0.9b for a long time... my problem is that I now only have # characters instead of the old solid walls... How can I get them back in the new version?

Which OS are you using?
I am using Vista and I do the following:
hit ~ and go to Features. Select the Walls category and for both normal walls and perm walls, hit "v" and change it to the solid blocks (all the way to the left).
